This limited-edition sour sets a new gold standard for mixed-culture wild ales.
It was built on a base beer utilizing a mixed malt bill and underwent a secondary fermentation with a South African strain of Brettanomyces yeast in second-use barrels from Woodinville Whiskey in Washington State to impart a light bourbon character.
We then put a large batch of organic apricots and their toasted pits (or noyaux) from Blackbird Organic Farm in Cawston, BC through a 72-hour carbonic maceration before blending and conditioned it for eight weeks before packaging. The resulting beer showcases aromas of marzipan and apricot jam and flavours reminiscent of tart cloudberry and nougat.
